La Petite Colline, a renowned dining establishment in North York, is seeking a talented and experienced Chef – Taiwanese Fusion Cuisine to join our culinary team. Key Responsibilities:
• Prepare and cook complete meals and specialty Taiwanese fusion cuisines, including traditional Taiwanese street food, modern Asian-inspired entrees, specialty sauces, soups, and small plates, using techniques unique to Taiwanese culinary traditions.
• Design and execute decorative food displays for cultural and special events such as banquets, showcasing traditional Taiwanese culinary artistry.
• Research, develop, and refine original recipes that blend traditional Taiwanese ingredients and techniques with international flavors to reflect a contemporary fusion menu.
• Plan, direct, and manage all kitchen operations to ensure consistent delivery of high-quality dishes in a fast-paced environment.
• Supervise, train, and mentor kitchen staff on authentic Taiwanese cooking techniques and fusion plating styles, enhancing the team’s skills and maintaining culinary consistency.
• Develop staff schedules, assign kitchen responsibilities, and ensure smooth coordination among all culinary team members.
• Plan seasonal and rotating menus with a focus on regional Taiwanese fusion cuisines, based on ingredient availability and customer demand.
• Maintain rigorous standards of hygiene, cleanliness, and food safety in accordance with provincial and federal regulations.
• Monitor inventory levels, requisition food and kitchen supplies, and implement cost-control measures to maintain operational efficiency.
• Ensure the kitchen complies with all health and safety regulations and contribute to maintaining a safe working environment.
Qualifications:
• Minimum three years of professional experience as a chef specializing in Taiwanese fusion cuisine.
• Proven leadership experience in a kitchen setting
• In-depth knowledge of traditional and regional Chinese cooking techniques and ingredients
• Strong command of baking methods, ingredients, and pastry techniques.
• Able to lift light loads (10-20 lbs).
• Positive, hardworking attitude with strong multitasking abilities.
• Excellent time management and ability to work under pressure.
• Strong teamwork and communication skills to meet kitchen goals.
